Is it possible to eliminate the necessity for a user to create an account when registering a ticket, so that they can simply just fill in a form for the issue. I'm looking to use this internally.

Hi David,
you can use the public frontend for this.
It is accessible thorugh http://your-domain/kix/public.pl.
There you can create a ticket without an account.
After the ticket creation you will receive a token to access the ticket again.
